Cuisine Concept

Everybody requires a customized diet. One type is not good for all, and standard diets such as high-carb, high protein or low-cal are simply not healthy choices for everyone. Ananda’s food concept is based on this belief and through incorporating key principles from Ayurveda. According to Ayurveda everything is made out of the five elements of air, space, fire, water and earth, including our bodies. The three body types are a combination of these - Vata constitutes air and space - Pitta is made up of fire and water - and Kapha is water and earth.

Therefore, when thinking about food we must take into consideration not just taste, but suitability to body type. For example, Vata body types (air and space) lean towards light and dry foods. In order to balance this, oily, moist and heavy foods, with tones of sweet, sour and salt need to be added to the diet. In contrast, Pitta body types (fire, water) need cool and heavy foods with sweet, bitter and pungent flavours to dowse the fire. Similarly, Kapha body types (water, earth) need light food, with bitter, pungent and astringent flavouring - such as thyme, rosemary and mustard.

Ananda in the Himalayas should not be looked at just as a place to diet and lose weight, but should instead be “a way of life”. Our cuisine is fresh natural foods low in fat and calories with an emphasis on whole grains, fresh fruits and vegetables, lean proteins, low-fat dairy products, and the avoidance of added or artificial salts, colors, flavors, or preservatives.

The objective is to provide a rejuvenation cuisine for guests, who, whilst relaxing, desire to re-vitalize their body and soul through a healthy approach to diet and lifestyle. This is reemphasized by the show kitchen at Ananda where our chefs instruct in how to make these dishes at home so that one may continue that ‘way of life’. Special care menus are provided in consultation with the in house Ayurvedic doctor, to align the specific imbalances of the various body types.

The Restaurant

The ambience in the Restaurant is in complete harmony with the prolific use of Yantric Art. Enjoy a delicious meal while your aural senses are treated to the lilting strains of classical instrumental music. Our spa chef would be happy to assist you in your specific dietary requirements making your Ananda experience truly special.

The spa’s signature restaurant features the finest Indian, Asian and Western cuisine. Based on the basic values of traditional cooking, the Restaurant explores new vistas in modern gastronomy, with emphasis on a light and healthy meal. Keeping in mind the long duration of stay of the guests, a la carte menu changes every 4 months according to the season.

The Restaurant offers a menu for better living with meals enriched with the vivid flavour of organic vegetables and herbs. It is built in a grove of old Sal trees, overlooking the valley of Rishikesh. The light warmth of the early morning sun or the evening stars adds to the Rejuvenation Cuisine. The menu encompasses of delicacies from Asian, Western and Oriental platter.

Tree Top Deck


The Tree Top Deck is a delightful outdoor venue of the Restaurant that is built on treetops, thereby infusing your meal experience with the beauty of the Himalayan mountains and the fresh, natural surroundings. Inhale the freshest air while enjoying a spa meal. Let the clear blue skies and the lush green vegetation serenade you while your palate is gently tempted by the exotic gourmet delight. At night, this venue offers a unique romantic dining experience, with the fireflies and the crickets, playing music to your meal.


The Pavilion

The Pavilion is a casual and elegant setting for drinks and light snacks. Located in the Restaurant building, the Pavilion is the ideal venue for intimate gatherings. Enjoy a drink or savour a complete meal under the expert guidance of our staff. With a bar that features the finest wines and liquers, the Pavilion is the perfect place to celebrate special occasions with family and friends.

Tea Lounge

Whether it is the cup of tea on your mind or merely historic curiosity, the Tea Lounge is your awaited answer. Located in the Viceregal Palace, it is a warm, romantic setting for an afternoon cup of tea and light snacks.

The lounge walls are adorned with the portraits of the erstwhile Maharaja and the other political dignitaries who visited Narendra Nagar during the reign of the Maharaja. Of particular interest and mention are the signatures and pictures of Lord Mountbatten, the last Viceroy of India. While the lounge quietly tells a story of days of yore, relax on the lounge sofas or admire the rich, brocaded tapestry and let yourself wander back into time.
